does anyone know how to take the paint of logos off helmets

If they're stickers you can use a heat gun to losen the tape. Paint usually comes off with packing tape. Use the clear packing tape, smooth it down over the paint, then rip it off like you would a band-aid.

you might want to try nail polish remover...works good for my sticks, but on my helmet, i just put electrical tape over it

I use electrical tape on my helmet. If you have a colored helmet you could find electrical tape in different colors at your local home depot or hardware store. The electrical tape is hardly noticeable. It just blends in with the rest of the helmet and looks like the logo was never there.

Why do you want to do this?... It strikes me first as kind of a pointless idea, but I also imagine there's no way of doing this without compromising the protectiveness of the helmet.

I remember a few years ago it was said that applying any sort of chemicals to helmets voids the warranty and/or certification. Just assume its still the same today.
