Profiling question

So I'm about to get my skates profiled based on some advice from OTG28.

However, I'm a bit confused about the need to re-profile the blade, since when I went to drop of my skates, I was told that the Grafs came with an 11.5 radius.

(This was before I told them the skates had step steel on them).

If a blade has to be re-profiled after every 20 or so sharpenings, do they still need to be if you have never changed from them the manufacturer's default profile?

I've got this idea in my head that maybe the times when the blue line tripped me, it's because the profile changed just ever so slightly and I just get used to it for the next 20 sharpenings, haha.
