Vortek Vk7 vs. Vortek VK5

the VK7 is the newer (and presumably better) one.

The VK5 is a pre-lockout spec series while the VK7 is fully NHL legal but you can add thigh boards to the pads. I have honestly never used a better trapper, no matter which series we are talking about and compared to anything else out there, that I've used (and I've used quite a few).
