Type of sharpenening I should use?

i'm pretty much confused to the whole idea of pitch, rocker, and hollow of a skate sharpening, i've always gone to the same guy who has done it the same way my entire life pretty much.

Like, what should I be wanting if im a lanky skinny guy who likes to use a long stride?

The lanky skinny part does not matter. If you like to use a long stride you may want to use a longer rocker on your steel. Maybe something like an 11 or 13 foot rocker. As for radius or your hollow, the more blade you have touching the ice, the more shallow radius you can use. Instead of a 1/2" hollow (which is the most common), you can use something in the range of 9/16 - 3/4. HOWEVER, I will tell you the same I tell all of my customers, the way you like your skates is based on personal preference. Please use this post as outside advice only, I am not trying to tell you what to do.
