Skate sharpening

I get my skates sharpened at Sports Experts (only out of necessity, there are no LHS in the immediate downtown Montreal area). I always call to talk to the person working at the shop to make sure that they know what they're doing before I have them sharpen my skates. Are there certain things I can look for right afterwards to tell if it has been done properly without overheating the blade/appying too much pressure? Should there be any sort of cross-hatching on the bottom of the blade? Should both sides of the blade have the same sharpness? Thanks.

To answer your questions in order.

Finish. Shine. If its patchy with lines width wise its not a good finish. Should be really shiny with lines going length of steel.
