I played with some guys last night that had jerseys that were of a material that was more like a shirt then a jersey. It wasn't any type of mesh. I have seen them before but was wondering if anyone knew what material it was and what manufacturers offer it as an option.

Nope, regular jersey cut just a polyester type material.

Projoy uses non-mesh material for a lot of their jerseys. That's how they can put those unusual designs on them.
