What is the default profile for a pair of Graf G35 ultra, 9' 11' or 13'?

So I now have a pair of Graf G35 Ultra and I want to switch the profile to be more like my old t blades which were a L-9 which I'm guessing is a 13'.

What is the profile of off the shelf graf's? Can I get the profile job done at most LHS (Victoria bc)? How much does it cost on average? Is this a good idea? Should I switch to a smaller profile? Is there anything I should know? Thoughts?
