Do OPS sticks really lose their pop, if so how quickly?

Yes, either by way of the shaft "whipping" out from repeated use, or the materials/foams in the blade breaking down such that they are not as stiff/rigid when you first buy the stick. How long it takes depends on the model you're using, how often youre playing, and your playing style.

2nd question sounds like a sizing issue more than anything.

When the elastic stretches out, I'll just replace the jock. I have the luxury of getting 10k's and 8k's for a decent price though.

In my experience, yes most OPS lose their pop overtime. In how long, no one would be able to answer that question, everyone is different. I can use a stick for a year comfortably if it doesnt break before, some guys that I know with heavy shots change sticks every few weeks because they say that they lose the pop they had when new.
