Profiling Step Steel

Hey everyone, I grabbed a pair of StepSteel runners for cheap Black Friday, and I have a question before I get them sharpened/profiled. I've been skating on CCM Hyperglides, and have loved them (I also bought another pair of them as well), and want the Steps to have the same profile as the Hypers. They're both listed as 10' radius, but when I compare them side by side, the Steps seem much chunkier in the toe and the heel (granted the Hypers have gotten a bit bananaed over time). What do I tell the shop when I get them sharpened? Should I just ask them to shave the toe and the heel, and if so, how much? Are the blades a true 10' profile, or does Step leave extra steel in the toe and heel, in which case would a regular 10' profile fix it? Also, are Steps more of a neutral pitch than the Hyperglides? I know I had tried a more neutral (the shop marked it as a +1 on the holder), 11' profile before and didn't like it, I felt like I was back on my heels, which makes suspect the Hyperglides are pitched forward more, but I'm not sure how much. I thought figuring out the different nuances between hollows was complicated, but with all the different options with profiles I feel like I'm going from learning multiplication straight to calculus

Only the middle 2/3rds of the blade has the 10' radius, the toe and heel areas have their own radius and those are not altered when you get a custom radius, so it will not "fix" the bulk. You'll have to have someone shave them down by hand.  I recommend leaving the bulk, it offers more power in pushes and heel turns. It will feel odd first few skates,then your body  mechanics will get use to it. BTW, +1 is not neutral it's1 degree forward. Neither Step or CCM steel has pitch from the factory.

Would you have the shop profile step steel from the factory? It's a 10' radius and I want that radius but was told I should have shop profile regardless.

You were given good advice. Factory steel radius are not very accurate or consistent.  It's quite common for one runner to have say a 9.5' and the other a 10'5', pivot points in different locations, different heights and toe/heel shapes.  Step brand is much better than OEM but can be off a bit. I'd say 9 of every 10 runners the factory radius is not exactly 10'.
