Good eats

I remember the days of coming home from working out or practise and whipping up macaroni noodles and tuna, or tuna over steamed rice. Nummers.

Just plain out of the can?

Yup. Just drain it, put it on and some parmesan if was eating the macaroni. Coming home late and being too tired to do anything made making this easy.

Mekinda's is where it's at for hot sauce. Habernero hot or Extra hot is my poison of choice.

http://www.melindas.com/products.html

Melindas is good but the best tasting habanero sauce is Marie Sharps. Gold label is hotter but white label taste better. Green label is mild, with more flavor. All are good, not EXTREMELY hot but neither is melindas.

I personally go with Franks hot sauce. Great flavor IMO :)

Never liked Franks.

TBL: Never seen Marie Sharps, nobody carries it locally.

PM me your address and I'll send you a bottle.

It's a product of Belize and formerly not sold in the states, luckily for some reason walmart grocery here now carries it limitedly, so I stock up.

A real easy recipe for grilled salmon... stumbled on this and we love it.

In a large bowl mix 1/3 each of Jack Daniels, brown sugar, and teriyaki marinade. Make sure to stir until the sugar dissolves. It smells horrible but don't let that worry you right now! Then we take salmon and cut it into portions leaving the skin on one side. Put it skin-side up into the bowl making sure it's completely covered with the mixture. Cover the bowl and put into the fridge so it can marinate for at least 4 hours... overnight is better. Fire up the grill and if using an LP ones clean the grates and run on high. Wipe the grates with Crisco shortening just before you grill the salmon to keep it from sticking. Place the salmon skin side down, add fresh ground black pepper to your taste, and grill for about 4 minutes. Then turn with a spatula carefully and grill for 3 minutes. The salmon should just flake apart. Be careful to not undercook or overcook (as that will really dry it out). We usually serve with rice, and like the yellow (saffron) rice best with it. One other tip... if you don't like the stronger flavor of some salmon soak it overnight in milk first, then rinse and marinate. We don't do this but some prefer it that way.

My favourite Filipino recipe couldn't be simpler-

1 chicken, cut into 8 pieces

1 cup palm vinegar (you can get it at Asian supermarkets)

1 1/2 cup dark soy sauce

5 cloves garlic, crushed lightly

10-20 whole peppercorns

1 bay leaf

water

toast garlic in 1 tablespoon of oil using a Dutch oven or other heavy pot, making sure you don't burn it. Remove garlic.

brown the chicken in the oil, working in batches.

add the vinegar, soy sauce, peppercorns, and bay leaf.

cover with water if necessary.

bring liquid to low simmer and cook chicken for an hour and a half. Eat with jasmine rice.

Made this for the Buffett show in Philly and plan on making it again soon.

One pound of shrimp

One bottle of lime juice

One container of organic coconut

Peel the shrimp and put in a plastic container. Dump in the lime juice and throw in a few handfuls of coconut. Marinate as long as you want, longer times will add more of the lime flavor. Shake from time to time. Put shrimp on skewer and throw on the grill over low or medium heat.

served w/Meyers rum?

Actually, you could soak some pineapple in rum then put those pieces between the shrimp. The rum/shrimp mix I tried last week didn't work out too well. Pineapple on the grill might be the tastiest thing I've discovered in a long, long time. Either in nice, thick slabs or in smaller pieces with the shrimp on skewers.

Myers with a splash of coke and some lime is perfect while you watch the stuff on the grill.

Peaches on the grill is another good one to do also. My neighbor makes a killer grilled watermelon salad. As absolutely horrible as it sounds, it tastes great.
