Is one filling enough?

Anyway to add to this thread, look for a book by a lady named "Rachel Ray". She is always on food network and hosts a show called "30 minute Meals". I know its not 20min, but its close. The book has all of the recipes. Great books, I highly reccomend them. They are all healthy meals.

Here's three different book by her

I use close to 3/4 lb of chicken so yeah, it makes to large tortillas. 2 cups of rice is really a lot too.

Guiness, only 125 calories per 12 ounce serving

"Brilliant!!"

I always keep a few cans of Swanson canned white meat chicken in the house. When I'm strapped for time and can't be bothered pulling out the Foreman, I just open up a can of that, mix with 1 tbsp of fat-free ranch dressing for flavor... and you got a quick, and somewhat healthier chicken salad (sans mayo... gross). Drop it on a whole wheat wrap and you're good to go. I'll even eat it plain out of the bowl, and boil up some Near East couscous.... takes about 5 minutes to make. It also makes a great base for a meal.... mix it in with a bag salad, etc.

One of my favs, other than a Guinness, is chicken cesar pasta salad.

I use the Forman to grill a few chicken breasts. Cook up some pasta. Add a few cut tomato's, maybe some steamed broccoli, some pimentos, olives, parmesan cheese. (I.e. whatever I might have in the fridge at the time)

Toss everything together with a bit of Caesar dressing and a little olive oil.

It keeps in the fridge for 4-5 days.

Anthony- Thanks for the canned meat tip. I always have a few cans leftover from camping trips...never thought to use them up like that.

That reminds me of another time-saver idea.

I do a lot of grilling on the weekend when the weather is nice. I’ll grill up a ton of meat and veggies for quick meals during the week. There is nothing like sitting down to lunch at work while everyone else has there frozen dinner or ham sandwich and I pull out a T-bone with grilled mushrooms, corn on the cob and a pasta salad.

Get a grill.

It doesn't take long to grill up chicken or steak. While you're doing that, cook some vegetables, rice, pasta or whatever.

I used to use a foreman a lot until I realized that it actually takes longer on it than my gas grill in the back. I freeze my meat, so when I leave for work I put a steak or some chicken in the fridge. When I get home, I light up the grill and let it heat up. While thats going I usually pull out some vegi's and cut them up/ season them a little. I by the time that is ready, the grill is good and hot. I cook my vegi's on the grill in disposable tins alongside the meat.

Takes under 30 minutes for everything.

Men's Health, maybe Men's Fitness?, has recipes on stuff you can use for leftovers or just quick items..

Whole Foods typically has some good quick recipes..

my lunch is a super time cruch ..so lately I go and get some chicken breasts from whole foods (pre-cooked) and some microwaveable rice (ie. Uncle Ben's etc..the organic stuff tastes like crap so I go with traditional brown rice ,etc) toss the rice in for 90 sec...then when its done and sitting..put the chicken breast in if needed to warm it up...3 minutes and a pretty good meal (depending on the amt of chicken 500-600 calories)

Chicken and pasta is probably the quickest. Takes however long it takes your choice of pasta to cook. I always eat pasta, preferably whole grain of some sort, with frozen pre cooked chicken. I toss the chicken in there with like a few minutes left before the pasta is done. Drain, add some sort of sauce, stuff in the jar is ok, just gotta look at the sodium content...prefer extra chunky veggies too, and eat with whole grain bread. I probably do this myself at least 3 times a week for lunch. Takes me less than 10 minutes to fix up.

mmm that makes me hungry. grill up that tortilla, and you've got me sold on the idea.

I usually go with the flatbread, with cheese, chicken, and salsa. Call me Mexican, but you gotta love the flavor.

George Forman grill + Wheat tortilla + Chicken Breast + Cheese + 2 cups of brown rice.

Thats dinner 4 days out of my week.

DSCF0792.jpg

Full size dinner plate for reference, very filling meal, only like $7.

I was on MSH on my Blackberry while out at the mall.... said to myself "I'm making these tonight, they look soooo good"

Picked up a family pack of chicken breasts.... a lil' Montreal Chicken seasoning, and a shredded 3 cheese blend, whole wheat tortillas....I even had cups of pre-cooked brown rice in the cubbard. I wrapped them up, set them on a skillet to warm up & melt the cheese (I wrapped everything up in 'em, even the rice)... whoa

Dats gets 2 thumbs up from the Fat Guy.... dee-lish. The wife even enjoyed a couple with some pico de gallo and sour cream

what do you guys say, we put together a ModSquadHockey cookbook? haha

For breakfast today it took 30 mins to order a tofu, smoked salmon and spinach egg white omelette and have it brought to me. I'm an excellent and quick patron.
