She is always on food network and hosts a show called "30 minute Meals". I know its not 20min, but its close. The book has all of the recipes. Great books, I highly reccomend them. When I'm strapped for time and can't be bothered pulling out the Foreman, I just open up a can of that, mix with 1 tbsp of fat-free ranch dressing for flavor... and you got a quick, and somewhat healthier chicken salad (sans mayo... gross). Drop it on a whole wheat wrap and you're good to go. I'll even eat it plain out of the bowl, and boil up some Near East couscous.... takes about 5 minutes to make. Add a few cut tomato's, maybe some steamed broccoli, some pimentos, olives, parmesan cheese. (I.e. whatever I might have in the fridge at the time)Toss everything together with a bit of Caesar dressing and a little olive oil. It keeps in the fridge for 4-5 days.Anthony- Thanks for the canned meat tip. I always have a few cans leftover from camping trips...never thought to use them up like that. I’ll grill up a ton of meat and veggies for quick meals during the week. There is nothing like sitting down to lunch at work while everyone else has there frozen dinner or ham sandwich and I pull out a T-bone with grilled mushrooms, corn on the cob and a pasta salad. While you're doing that, cook some vegetables, rice, pasta or whatever.I used to use a foreman a lot until I realized that it actually takes longer on it than my gas grill in the back. I freeze my meat, so when I leave for work I put a steak or some chicken in the fridge. When I get home, I light up the grill and let it heat up. While thats going I usually pull out some vegi's and cut them up/ season them a little. I by the time that is ready, the grill is good and hot. I cook my vegi's on the grill in disposable tins alongside the meat.Takes under 30 minutes for everything. Share this post Link to post Share on other sites

Jim A 4 Report post Posted February 23, 2007 Men's Health, maybe Men's Fitness?, has recipes on stuff you can use for leftovers or just quick items..Whole Foods typically has some good quick recipes..my lunch is a super time cruch ..so lately I go and get some chicken breasts from whole foods (pre-cooked) and some microwaveable rice (ie. Uncle Ben's etc..the organic stuff tastes like crap so I go with traditional brown rice ,etc) toss the rice in for 90 sec...then when its done and sitting..put the chicken breast in if needed to warm it up...3 minutes and a pretty good meal (depending on the amt of chicken 500-600 calories) Share this post Link to post Share on other sites
sc37 0 Report post Posted February 23, 2007 Chicken and pasta is probably the quickest. Takes however long it takes your choice of pasta to cook. I always eat pasta, preferably whole grain of some sort, with frozen pre cooked chicken. I toss the chicken in there with like a few minutes left before the pasta is done. Drain, add some sort of sauce, stuff in the jar is ok, just gotta look at the sodium content...prefer extra chunky veggies too, and eat with whole grain bread. I wrapped them up, set them on a skillet to warm up & melt the cheese (I wrapped everything up in 'em, even the rice)... whoaDats gets 2 thumbs up from the Fat Guy.... dee-lish.
